- 2 cans black beans rinsed & drained
- 2 small cans white corn rinsed & drained
- 2 cups red &/or yellow pepper diced
- 1/2 cup red onion diced
Combine all the above
- 8 T olive oil
- 2 T sherry or white wine vinegar
- 1-2 T lemon juice
- 1/2 t salt
- 1 garlic clove minced
- 1/4 t paprika
- 1/4 t cumin
- 1/4 t coriander
- 1 T mint chopped
Combine above and pour vinaigrette on bean corn mixture. Taste & correct for seasoning.
This recipe has evolved over the years. I make it a little differently each time, adjusting and altering. I bet lime juice and cilantro would be delicious. (Thanks to Cindy and Ann for that idea).
