Black Bean and Corn Salad

  • 2 cans black beans  rinsed & drained
  • 2 small cans white corn   rinsed & drained
  • 2 cups red &/or yellow pepper diced
  • 1/2 cup red onion diced

Combine all the above

Dressing:

  • 8 T olive oil
  • 2 T sherry or white wine vinegar
  • 1-2 T lemon juice
  • 1/2 t salt
  • 1 garlic clove minced
  • 1/4 t paprika
  • 1/4 t cumin
  • 1/4 t coriander
  • 1 T mint  chopped

Combine above and pour vinaigrette on bean corn mixture.  Taste & correct for seasoning.

This recipe has evolved over the years.  I make it a little differently each time, adjusting and altering.  I bet lime juice and cilantro would be delicious.  (Thanks to Cindy and Ann for that idea).
